Vision premium Wagyu
Our Vision
We exist to create unforgettable “ah-ha” moments that make all other beef irrelevant. Every cut we produce, every decision we make, drives toward a singular goal: to make Statkar the name in Wagyu. With top-grade genetics, chef-approved quality, and a relentless pursuit of excellence, we’re building a legacy that challenges outdated thinking and proves—once and for all—that Japanese Wagyu stands in a class of its own. This is our purpose, our daily practice, and the horizon we’re racing toward.
This isn’t just beef—It’s a reckoning.
Most ranchers start as cowboys. Jason McConniel started as a chef. He wasn’t looking for a business. He was looking for a steak that didn’t exist. American Wagyu was a fraud — shortcuts, lies, and the dilution of something sacred.
So he walked off the line, out of the kitchen, and into the ranching world to do it himself. Statkar doesn’t follow the herd. It rewrites the rules.
Every cut is a masterclass in patience, precision, and the ruthless pursuit of perfection. From genetics to feeding to stress levels, everything is controlled, tested, and proven — because real Wagyu demands it.
Frequently Asked
Questions
How much Wagyu should I order for my dinner party or steak night?
Hosting a dinner party or a legendary steak night? You’re in the right place. Our 100% full-blood Japanese Wagyu is rich, buttery, and unforgettable-so you don’t need massive portions to deliver a top-tier experience. Here’s what we recommend: For steak night with the guys: Go big. Think 8 oz per person for cuts like ribeye, striploin, or picanha. Serve it up medium rare, slice it thick, and let the marbling do the talking. For elegant dinner parties: Keep it classy with 4-6 oz per guest, especially if you’re serving multiple courses or sides. Wagyu isn’t just food-it’s a statement. A few bites of the real thing will leave people talking. For tasting menus or upscale entertaining: Just 2-3 oz per person is all you need to impress. A flight of different cuts-like filet, ribeye, and picanha-is a crowd-pleaser. Pro Tip: Full-blood Wagyu is far richer than regular steak. It’s about quality, not quantity-so plan for indulgence, not overload

What makes your Wagyu different from other beef?
Our Wagyu is 100% full-blood Japanese-no crossbreeding, ever. These cattle come from verified Japanese genetics and are pasture-raised with care on our family farm. The result? Incredible marbling, tenderness, and flavor that go far beyond USDA Prime. This is the real deal.
How is the beef packaged?
All of our cuts are vacuum-sealed and flash frozen at peak freshness. Orders are shipped in insulated boxes with dry ice to maintain quality from our farm to your kitchen.
Is your Wagyu beef healthy?
Yes! Full-blood Wagyu is naturally rich in omega-3s, omega-6s, and CLA (conjugated linoleic acid)-healthy fats known to support heart health and reduce inflammation. It also has lower cholesterol than conventional beef. Nutrient-dense and indulgent.
What's the best way to cook Wagyu?
Keep it simple-Wagyu doesn’t need much. Cook on a hot cast iron pan or grill Use minimal seasoning (salt is enough) Sear each side for a beautiful crust Let it rest before slicing Avoid overcooking-medium rare lets the marbling shine.
